Thousands of years ago, all dairy contained only the A2 beta-casein protein. The same structure found in human breast milk. Dairy exactly as nature intended.

A single amino acid mutated.

In European cattle herds — the high-yield breeds that now dominate factory farming — one amino acid changed in the protein chain. This created A1 beta-casein. Today, almost all grocery store dairy is a mix of A1 and A2.
